Scallops Tartar
Serves : 
Ingredients : 

200g scallop

4 tbsp Vaynilla’s olive oil with lemon

1 vanilla pod or a pinch of Vaynilla’s vanilla powder

Juice of one small lemon

3 pinches Vaynilla’s Kaffir lime and vanilla flavoured sea salt.

Method : 

If using a vanilla pod split it in two and remove the pulp.

Mix the pulp or vanilla powder with the olive oil and add the lime juice and flavoured sea salt.

Finely slice the scallops and mix all ingredients together.

Leave for 30 minutes before serving.

Presentation :

Can be served on a bed of lettuce and rocket seasoned with olive oil and balsamic vinegar.

Sprinkle with black pepper and plain ‘fleur de sel’ salt.

Top with garlic croutons.
